Read our disclosure policy. Peppermint bark marshmallow cereal bars are a quick and easy festive treat to enjoy during the holidays. They’re sweet, crunchy, and great for sharing. Show loved ones you’re thinking about them by gifting packaged homemade sweet treats. I’m adding these peppermint bark marshmallow cereal bars to my holiday cookie boxes! Chocolate Peppermint Cereal Treats This is an easy no-bake dessert that can be doubled, tripled, or quadrupled to fit your holiday gifting needs. The recipe is for one 9-inch square baking pan. Double the recipe for a 13×9-inch pan. These festive marshmallow cereal bars have sweet crunchy cereal mixed with bits of crushed peppermint candies and chunks of dark chocolate. The top of the bars are layered with white chocolate, dark chocolate, and more crushed peppermint! They are unbelievably delicious. You may want to save extra peppermint from the holidays so you can make this again come January! Ingredients Only a handful of ingredients are needed to make these fun festive treats. The recipe calls for crispy rice cereal, but you may sub in your cereal of choice! It’s best to melt the butter and marshmallow stove top. However, you may opt to heat them in the microwave, as well. If You Care Parchment Baking Paper Since I cook and bake daily, I try to limit the amount of waste I produce in the kitchen. I’m super conscious about the ingredients and products I use. I’m a big fan of If You Care’s line of products, especially their parchment. Their parchment is unbleached and chlorine-free. Most importantly, If You Care’s products are intentionally crafted to have the least environmental impact with the lightest carbon footprint possible. Use parchment paper to line the baking pan. No need to butter! The marshmallow treats will not stick to the parchment. Plus, the parchment will help you easily unmold the assembled marshmallow treats. Packaging Food Gifts Asides from lining baking sheets and baking pans, If You Care parchment baking paper is great for packing up these peppermint bark marshmallow cereal bars. Parchment is great for layering! Cut the parchment into squares and use them to keep the cereal bars from sticking to one another. Line cookie tins or gifting containers with parchment to help cushion and protect the cereal bars. This will help in unmolding the marshmallow cereal treats. Set aside.In a large sauce pot, melt butter over medium heat. Add marshmallows and salt. Stir to combine until marshmallows are melted and smooth. Remove from heat.Add in cereal. Gently fold to combine until melted marshmallow mixture has been evenly distributed. Stir in peppermint candy. Fold until distributed. Transfer 1/3 of cereal mixture to prepared baking pan. Press into an even layer. Sprinkle 1/2 of dark chocolate chunks. Top with another 1/3 of cereal mixture. Press into an even layer. Sprinkle remaining 1/2 of dark chocolate chunks. Finish with remaining 1/3 of cereal mixture. Press into an even layer. Use additional sheet of parchment paper to help ensure mixture is level on top.Cool mixture to room temperature.Topping:Gently melt white chocolate over a bain-marie until smooth. Alternatively, heat white chocolate chips in the microwave according to package instructions. Spread melted white chocolate over marshmallow cereal treats. Allow chocolate to set.Gently melt dark chocolate over bain-marie until smooth. Alternatively, heat in a microwave safe bowl at half power in 15-20 second intervals until smooth and melted.Spread melted dark chocolate over set white chocolate. Immediately sprinkle peppermint candy on top. Allow chocolate to set. Unmold marshmallow cereal treat from pan by lifting from excess parchment paper. Place on a cutting board. Slice in 9 equal squares, or desired serving sizes. NotesStorage: Peppermint marshmallow cereal treats will keep in an airtight container at room temperature for up to 4 days.
